FRIED PLANTAIN/DODOSaturday, April 19, 2014

Pinch of salt

1.    Peel the plantain with a knife (cut the two ends off and make a slit at one side and remove the peel)

2.    Place a frying pan on a medium heat, add enough oil to come halfway and heat until hot (350 degree)

3.    Cut the plantain diagonally or slice, sprinkle with salt and fry between 4-5 minutes and is ready

4.    Serve with fried sauce, egg, beans, rice etc.

- If you are frying with little oil, the best type of frying pan or pot to use is non-stick frying pan/pot so as not to stick and to make it easy to fry

- During frying, if the plantain is turning brown so fast reduce the heat to low or take it off the heat for some seconds

- You can deep fry whole plantain between 12-15 minutes in 350 degree oil

- Ripe Plantain: If you have an unripe plantain; wrap it in a kitchen towel and tie in a nylon (grocery bag), this process will make it ripe faster than placing on the kitchen counter (make sure to check 1-2 days after)
